I eat a wrap everyday. I use the Ezekial Sprouted Whole Grain Tortillas. SO delicious and good for you! A wholesome source of carbohydrates and whole grains. Tip: Trader Joes has the best deal for these tortillas. I go and stock up with 2 or 3 packs at a time (like I said, I eat one everyday)! In this recipe I jam pack the wrap with tuna, hummus and fresh veggies- So freakin good!! I crave this wrap all the time.
This meal is great for food prep. The hummus and tuna recipes are also on my blog, so I just make these ahead of time, so they’re ready to add to my wrap and go! I also pre-make them for a few days, wrap them in foil and store them in the fridge when I know I won’t be home for lunch.
1 Ezekial Wrap
3 Tbsp Curry Hummus (recipe in blog)
5 Slices English or Persian Cucumber
Small Handful Spinach
3 Tbsp Shredded Carrot
1/2 Cup Tuna Salad (recipe in blog)
1/4 Cup Broccoli Sprouts or Microgreens
Small Palmful Ripped Cilantro
Let’s Make It!
Start with your tortilla. Spread the hummus on half the tortilla. Start layering your cucumbers, spinach and shredded carrot. Add the tuna salad. Top with sprouts and some fresh cilantro and roll it up!
