I made this recipe on my cut as well. I have been obsessed with cottage cheese, because it’s high in protein and I was looking for ways to add more protein! I thought what better than adding protein balls. I looked up about 100 recipes to concoct the perfect recipe! I made these balls, so you can either eat them by themselves or make it into a cookie and crumble it over Greek yogurt or cottage cheese. YUM!!!
Ingredients
- 1 Can chickpeas, peeled, drained, rinsed
- 1 Scoop vanilla protein powder
- 1/4 Cup maple syrup
- 2 Tbsp Greek yogurt, nonfat
- 2 Tbsp coconut flour
- 2 Tbsp peanut butter
- 3/4 Cup dehydrated strawberries
Let’s Make It!
Make sure you have drained, rinsed, and peeled your chickpeas. Put the chickpeas in a food processor. Add all the remaining ingredients and turn on food processor for 2-3 minutes or until the consistency is dough-like. Roll out 1 ounce balls.
You can enjoy like this or make cookies to crumble on your cottage cheese, yogurt, or just eat by itself.
COOKIE OPTION:
- Preheat oven to 350.
- Flatten balls on parchment paper on a cookie sheet.
- Bake for 10 minutes.
