I LOVE Overnight Oats. They are a great source of fiber and it keeps me full for a long period of time. I would bring this to work for lunch a couple times a week. Now that I am home and want to snack ALL the time, it makes for a great lunch to satisfy my cravings for sweets and carbs. I also add berries for added antioxidants, nuts for protein and dates !

Ingredients:

Base-
1/2 Cup Old Fashioned Rolled Oats
3/4 Cup Unsweet Coconut Almond Milk
1 Tbsp Chia Seeds
1/2 Cup Grated Fuji Apple
1/4 Tsp Pure Vanilla Extract
1 Tsp Pure Maple Syrup
1/2 Tsp of Cinnamon

Toppings-
1/4 Cup Chopped Unsalted Walnuts
2 Large Medjool Dates Sliced*
1 Tbsp Shredded Unsweetened Coconut
1/2 Cup Mixed Sliced Strawberries & Blueberries (optional)**

Let’s Create it:

Include all of the base ingredients in a mason jar or airtight container and shake to mix well. Refridgerate overnight. Pour out the overnight oats in a bowl and add the toppings.

Notes:
* I love dates, but golden raisins or regular raisins also go great in this recipe as a substitution.
** I always add berries to my overnight oats, but you don’t have to too. The recipe is meant to be apple pie.
