Oh my gosh you guys, soooo good! I had this veggie thai yellow curry at a restatuant that I fell in love with. When my husband was out of town, he had a seafood thai green curry that he said was the bomb! He doesn’t usually like curry, so I took advantage of this, because I love thai curry!! I used the bottled Trader Joes Thai Style Yellow Curry Sauce for this recipe; alhthough, I will be trying the Red and Green Curry options they have at Trader Joes for this recipe as well. I like ALL the curries 🙂

Ingredients:
1 Cup Cauliflower
1 Cup Broccoli
1 Cup Green Beans
1 Small Sweet Potato
1 Zuchini
1/2 Lb Bay Scallops
1/2 Lb Cod
1/2 Lb Shrimp
2 Tbsp EVOO
Salt n Pepper
1 Bottle Trader Joes Yellow Thai Curry
Jalapeno for Garnish (optional)*
Cooked Rice of your Choice

Let’s Make It:

Cut all veggies into bite sized pieces. I steamed my veggies in waves, because I do not like them to be overdone. Start by steaming the sweet potato for 8 minutes. Throw in the cauliflower, broccoli and green beans for an additional 5 minutes. Remove from heat and set aside.

Season the seafood with a couple pinches of salt and pepper. Heat EVOO and sautee the zuchini for about 3-4 minutes until tender, but still crunchy. Set the zuchini aside with the other veggies. Add the seafood to the pan and sautee until translucent, about 3-4 minutes. Stir the curry in the mixed seafood and cook for an addtional 2 minutes. Finally add your vegetables to the curry medley. Serve over your favorite rice. As you all know from my other posts, I like the Trader Joes brown rice medley; which I used and you see in the photo.

Notes:
* June is not a fan of spicy and I am! This curry from Trader Joes has a mild heat to it, but June could handle it; although, I like to add fresh jalapenos to my dish for some added heat.
