I probably eat this as my post workout morning meal about 4-5 times a week. It is simple, delicious and I can prep all of the ingredients ahead of time to scramble when I am ready. Not to mention it sets me up with a plentiful amount of protein (51g) right out the gates!
To prep ahead of time: Chop the veggies, cook the turkey and put in a Tupperware in your fridge. You can portion these per serving to save even more time too! If you are making burritos – you can make the whole recipe, make, and wrap the burritos and store in the fridge for a grab-and-go situation!
Ingredients
Olive Oil Spray*
4oz Ground Turkey
1/2 cup Chopped Mushrooms
1 cup Chopped Fresh Spinach
3 Eggs
2 Tbsp Goat Cheese
Salt & Pepper to Taste
Dash of Garlic Salt
Chopped Pickled Jalapeno (optional)
Ezekial Wrap (if you want to make a burrito)
Let’s Make it!
Spray some olive oil spray in a frying pan and sauté the ground turkey with some salt and pepper until cooked through. While the turkey is cooking chop the mushroom and spinach and set aside separately. Also, whisk the eggs in a bowl. Take the turkey out of the pan and set aside.
Spray more olive oil spray to coat the pan. Add the mushrooms to the pan to cook until soft. Add the spinach and cooked ground turkey to the pan and give a few stirs to combine. Add the whisked eggs to the pan and sprinkle some garlic salt to taste. Stir the scramble to combine and cooked thoroughly. Fold in the goat cheese.
If using- add the chopped jalapeno. You can also top with your favorite salsa or hot sauce! I love to eat this as a scramble, but when I am on the go – I put it in a burrito- it’s so good!
NOTES:
*I use olive oil spray most of the time, but you can also use avocado oil, butter, ghee, or tallow.
