I LOVE Meatballs!! My Dad always made these growing up and this recipe makes a ton of meatballs; I like to freeze half of the batch for future dinners. The meatballs are so good as just a snack with some cheese on top. For dinner, I like to use brown rice pasta or if I am watching my carbs, served over spinach!!

Meatballs over Spinach

Ingredients

1 Lb Ground Beef
1 Lb Ground Pork
1/2 Yellow Onion Chopped
5 Cloves Garlic Chopped
1/4 Cup Basil Chopped
1/3 Shredded Mozzerela
1/3 Cup Shredded Parm
3/4 Cup Italian Breadcrumbs
2 Eggs
1 Tbsp Dried Italian Seasoning
1 Tsp Salt
1 Tsp Pepper

1 Jar Your Favorite Marinara
Brown Rice Pasta or Spinach
Mozzerela and Parm for garnish

Preheat oven to 350 Degrees. Mash together the ground beef and pork. Add the onion, garlic, basil, eggs, breadcrumbs and cheeses. Add the italian seasoning and salt and pepper. When everything is mixed together, roll your meatballs into about one inch balls. Place the meatballs on a cookie sheet with parchment paper. Bake for 20 minutes.

When the balls are finished. I put half in a freezer safe tupperware and the other half I add to marinara. For these, simmer in the marinara sauce for about 15 minutes covered. While the balls are marinating in sauce, cook your pasta or saute the spinach. Top your meatballs on the pasta or spinach and garnish with parm, mozz or both… and ENJOY!!
