Bring Hawaii Home with this Amazing Lava Flow Overnight Oats Recipe! I am trying to create more recipes to use protein for after my workout and this one is the bomb! It seems everyone is in Hawaii right now… and drinking the infamous Lava Flow. So I came up with this amazing and tropical recipe. Perfect for summer too!! I mean it doesn’t taste exactly like a lava flow, but it’s close and the ingredients are there … it’s delicious 🙂

The Base

Ingredients:

1/2 Cup Coconut Milk
1/2 Banana
1/3 Cup Fresh Pineapple Slices w/ Juice
1/2 Cup Oatmeal
1 Tbsp Chia Seeds

Whip it Up:

Put the coconut milk, banana and pineapple slices with juice in the blender and blend until mixed together (does not have to be fully blended, chunky is okay). Add the oatmeal to the blender and pulse to combine (do not blend). Pour the concoction into a mason jar or airtight container. Add the chia seeds and mix well. Refrigerate overnight.

The Strawberry Puree

Ingredients:

1/3 Cup Coconut Milk
4 Strawberries
2 Scoops Vanilla Protein Powder*

Blend all ingredients together until smooth. Pour in the bottom of a bowl or glass. Pour the overnight oats (that has refrigerated overnight) on top of the puree.

You can use anything that blends the ingredients together. I used a hand mixer, so I didn’t have to wash the whole blender, because it’s a smaller portion.

*You do not have to use protein powder. Just omit this ingredient and blend 1/4 cup coconut milk with the strawberries.

Toppings

Ingredients:

1/4 Cup Chopped Banana
1/4 Cup Chopped Strawberries
1/4 Cup Pineapple
2 Tbsp Shredded Unsweetened Coconut
1/4 Cup Tbsp Chopped Macadamia Nuts!
Drizzle Agave Syrup (or Honey)

Add these ingredients to the top of the the deliciousness you have created and ENJOY!!!
