This is one of my favorite light lunches or snacks. I started making it at work when I was pregnant. Now, it has become part of my postpartum diet as well, because it is filling and healthy.
1 Slice of Ezekiel Bread
2 Tbsp of Hummus or 1/2 Avocado Mashed
2 Shakes of Everything but the Bagel Seasoning
6 Slices of Cucumber
1 Sliced Hardboiled Egg
1/4 Cup Alfalfa Sprouts
Create the Yumminess:
Toast the bread. Spread the hummus on the toast. You can also use avocado and make avocado toast. I just mash the avocado on the toast instead of the hummus. Sprinkle some Everything but the Bagel Seasoning to taste. Place cucumbers on the hummus or avocado. Stack sliced hardboiled egg and alfalfa sprouts on top. Sprinkle some salt and pepper to taste. Cut the toast into four pieces. Enjoy!
